Cozido das Furnas
Cozido das Furnas technically called Cozido nas Caldeiras – because it is cooked in holes in the geothermal soil for 5 to 6 hours, at a temperature between 64ºc and 96ºc. It is commonly known as Cozido das Furnas because it is in that Azorean locality that it is made. Beef, pork and chicken, feet, ears and pork ribs, black pudding, chorizo, fatty bacon, cabbage, yams, potatoes, sweet potatoes and carrots are placed inside an aluminum pan. An emblematic dish from Furnas and even from the island of São Miguel. In addition to the stew, other dishes are made in these holes, namely the typical feijoadas and bacalhoadas that are served in several local restaurants.
